Maple Dijon Roasted Carrots

- 2 lbs carrots, washed (or 2 lbs of baby carrots)
- 4 tbsp butter, melted
- 1/3 cup pure maple syrup
- ¼ cup brown sugar
- 1 ½ tbsp dijon
- Salt & pepper
- Preheat the oven to 400 degrees. Lightly spray a large baking sheet with nonstick spray. Spread carrots out over the baking sheet in a single layer.
- In a medium mixing bowl, combine melted butter, maple syrup, brown sugar and dijon mustard. Whisk well and drizzle over carrots, tossing to coat well. Sprinkle it with salt & pepper.
- Bake for 30-40 minutes or until soft, turning once at the halfway mark. Remove from the oven, place on a platter and serve!
